Boiled yuca: a great alternative to rice or potatoes

Boiled yuca is commonly used as a side dish in some West African countries because yuca is locally grown and often less expensive than other goods such as rice and potatoes. It is very easy to cook and goes very well with a little spicy tomato sauce. Boiled yuca is a simple way of giving an everyday meal a little tropical twist.

Boiled Yuca
Serves 2-4
Prep time 15 minutes
Cook time 30 minutes
Total time 45 minutes

Ingredients

  • 1 Yuca
  • Salt
  • Boiled water (half a pan)

Directions

1. Cut the yuca in 4 or 5 big chunks horizontally.

2. Using a sharp knife, make an incision along each chunk and gently peel off the skin of the yuca;

3. Cut each chunk of yuca in half vertically and remove the heart of the yuca (it looks like a small string)

4. Wash and carefully drain the yuca.
5. Cut the halves of the chunks in smaller semicircles (according to your taste).

6. Boil the yucca for a few minutes or until you can prick the yucca with a fork.

7. Drain the boiled pieces into a strainer for a few minutes

8. Add a little bit of salt.
9. Serve hot as a side dish, to replace rice or mashed potatoes for example. Enjoy!

    This is also a favorite in Haiti and Brazil. Goes great with meats of various sorts. yum
