I had three very ripe plantains in my fridge and they were on the verge of becoming unusable. Considering how versatile plantains are and everything you can do with them at every stage of ripeness, it would have been a real crime to let them go to waste. The issue was, I neither wanted to research a new recipe nor did I want to make my go-to recipe when I have overripe plantains, which is klaklo. because I wasn’t in the mood to fry anything. What was a plantain aficionado to do? I decided to modify the traditional klaklo recipe and make baked plantain patties instead of the typical fried plantain balls. I followed all the steps for making klaklo and only changed the cooking technique. I was a little bit apprehensive as to how the results would taste, after all my lunch depended on it! Well, my baked klaklo turned out even better than I could have imagined. The light oil coat ensured that the bottom of the patties was crunchy when they came out of the oven, which formed a succulent contrast with the softer top part. The flavors of klaklo were all there, with added playfulness from the dueling textures and of course, fewer calories. Health conscious folks, this recipe is for YOU! Baked klaklo Recipe

Serves 4
Prep time 20 minutes
Cook time 20 minutes
Total time 40 minutes

Ingredients

  • 3 very ripe plantains (completely black)
  • 1/3 cup rice flour
  • 2 tablespoons onion puree (puree 1 small onion in a blender with a little water)
  • salt to taste
  • 2 tablespoons oil

Optional

  • chili powder to taste

Directions

1. Peel the plantains and put them in a big bowl.
2. Mash them with a potato smasher
3. Add the rice flour, salt and chili powder if using
4. Put your oil in your a small bowl. Coat your hands with a little oil and form small patties with the plantain batter, making sure that the patties' surface is covered with a light oil coat.
5. Put your patties on an oven tray covered with parchment paper
6. Bake at 400F for 20 minutes or until the plantain patties take on a rich gold and brown color.
