Coconut Crumble, a tropical twist to a Fall favorite

As autumn is upon us and we long for the long hot summer nights, we need comfort food. In my case, comfort desserts! One of my personal favorites is a crumble… of course always with a twist!

Ingredients

  • 1 Small mango or 2 apples (apples for pies)
  • 100ml (rice flour or all-purpose gluten free flour)
  • 100ml finely shredded coconut
  • 100g melted butter
  • 50g sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Directions

1. cut the mango or the apples in small pieces and put them in ramekins

2. mix the flour, coconut, sugar, butter, vanilla and cinnamon (and yes, you might need your fingers!)

3. spread the mix on top of the fruits in your ramekins

4. bake at 350 F for approximately 25 minutes, or until they get as brown as desired
