Yuca crisps

Ingredients
- 1 yuca (increase quantity as needed)
- oil for frying
- salt
Directions
| 1. | peel the yuca and cut in slices using a sharp knife or mandolin. My mandolin was not strong enough to handle the yucca, so I used a knife instead. Try to get slices about 1/8 in (3 mm) wide or smaller |
| 2. | Put some oil in a skillet with high walls, and heat |
| 3. | Once the oil is hot, put the yucca slices in the oil one by one. Make sure that all the slices are completely inside the oil |
| 4. | Once the edges of the slices turn a golden brown, they are ready |
| 5. | Using a slotted spoon, remove them from the frying bath and place them on a paper towel in a plate |
| 6. | Sprinkle with salt |
