Sugar-free Plantain Bread Recipe

Ingredients

  • 1 cup mashed ripe plantain (180 g)
  • 1/2 bar butter (~ 60 g)
  • 1 1/4 flour (~150 g)
  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons sour cream (I used yogurt instead)
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Directions

1. Beat margarine until soft; add sugar, eggs and yoghurt.
2. Blend plantains, flour, baking soda and baking powder. Add them to the previous mixture. Add the vanilla and beat thoroughly.
3. Pour the mixture into a greased and floured pan ( or small individual muffin or madeleine pans)
4. Bake in a preheated oven at 350 degrees for about an hour. Check with a wooden toothpick. When it comes out dry, the bread is done.
