Mango salsa, sweet and salty dip

I promise, I did not only make this dish because there was only one step in the cooking instructions! This salsa’s sweet and salty taste will add some zest to any meal, whether it is served as an accompaniment to a grilled meat or fish  dish or as a dip for crunchy corn tortillas. It is also very colorful and for West Africans, an original spin to the way mangoes are traditionally eaten.

Mango Salsa
Serves 2
Prep time 20 minutes

Ingredients

  • 1 mango, (peeled and diced)
  • 1/2 cup peeled, diced cucumber
  • 1 tablespoon finely chopped jalapeno
  • 1/3 cup diced red onion
  • 1 tablespoon lime juice
  • 1/3 cup roughly chopped cilantro leaves
  • Salt and pepper

Directions

1. Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste. Cover and allow to sit for 30 minutes before serving.
