Cool like this easy lime and mint mocktail

I first had this refreshing drink at a friend’s house a couple of years ago. She served a delicious lime and mint cooler that was so tasty that I asked her for the recipe. I was surprised at how simple it was, but did not have the opportunity to try it until recently. I am not sure the drink I ended up making followed the exact steps my friend Smitha generously shared with me, but the refreshing taste was certainly there. I added a tinge of honey to counter the tartness of the lime, a suggestion of sweetness, fantastic because of its subtlety, and boom, I had my favorite summer drink!

Lime and mint cooler Recipe

Serves 2
Prep time 15 minutes
Meal type Beverage

Ingredients

  • 1/4 cup fresh mint leaves
  • 2 small limes (squeezed for their juice)
  • honey (to taste)
  • 2 1/2 cups water
  • crushed ice to serve (optional)

Directions

1. In a blender, process the fresh mint leaves and lime juice until almost a paste. (Or use a food processor first then transfer to a blender)
2. Add in the water, sugar or honey to taste and blend until well combined.
3. Serve chilled with some crush ice
