Plantain fritters, beignets or Makala Ma missole

How many plantain fritters recipes are there in the world? My guess is as many as there are tropical countries. This one is from Cameroun, and it may be my favorite one so far.

Have you ever read a recipe’s directions and then found yourself questioning the accuracy of the steps? That is the experience I had with the makala ma missole recipe. Why? It called for cooking the plantains before mashing them and it is a technique I had never used. I decided to follow along and to see where this unusual (for me) technique would lead. I could not be more glad I did! The end product tasted like wonderful childhood memories, I must have had those fritters at someone’s house growing up. Memory trip aside, the makala ma missole might be my favorite plantain fritters because of the subtle yet unmistakable hint of nutmeg, which complements the plantain flavor in a smooth and successful marriage.

Ingredients

  • 3 ripe plantains
  • 3 eggs
  • 3/8 cups brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/3 cups flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • nutmeg to taste

Directions

1. Peel the plantains, cut them in big chunks and cook in a pan half-filled with water for 10 minutes
2. Remove the plantain chunks from the pan and put them in a recipient filled with cold water to stop the cooking process. Strain and puree with a fork or potato masher
3. In another bowl, put the flour sifted with the baking powder and salt. Mix these dry ingredients and add the sugar
4. Beat the eggs, and add to the dry ingredients' bowl. Slowly incorporate the milk and mix well, until you get a smooth batter.
5. Add the plantain puree and nutmeg and let the batter rest for a few minutes.
6. Heat some frying oil in a pan. When the oil is hot, scoop small quantities of batter and place carefully in the oil. Do not overcrowd the pan. When the fritters take on a golden brown color, they are ready.
7. Drain on some absorbent paper and serve immediately, sprinkled with confectioners' sugar.
