St-Jean de Luz Macarons, chocolate kisses from Spain

Since I’ve had the chance to eat delicious gluten free macarons last summer, my desert-oriented brain started looking for macarons recipes!! I found a recipe of St-Jean de Luz Macarons. Long story short, these macarons are from the Basque Country and are as old as Louis XIV… and mostly, they are worth a try as they taste different than «regular» macarons. And interesting info: these macarons are called «muxuk» in Basque, which means «kisses»!! 😉

St-Jean de Luz Macarons
Serves approximately 30
Prep time 10 minutes
Cook time 20 minutes
Total time 30 minutes

Ingredients

  • 250g almond flour
  • 350g sugar
  • 5 egg whites
  • 2 tablespoons of dark chocolate powder (optional)
  • 1 tablespoon vanilla

Directions

1. mix the almond flour, sugar, 3 egg whites and vanilla
2. beat the remaining egg whites until stiff and add them to the mix
3. add the chocolate powder to half of the mix (optional)

4. make little macarons (with a spoon or a pastry bag) on greaseproof paper

5. bake them at 355 F for approximately 20 minutes, or until they get as brown as desired!!
