Fried yuca: delightful snack and/or side dish

I had never tried fried yucca before gracefully sacrificing myself for the good of Tropical Foodies. This dish exceeded by far my expectations and is ranked at the top of my list of favorite side dishes, right beside fried plantains. Slightly sweet, fried yucca gets a crispy crust while remaining unbelievably tender inside. I became so keen of this dish that I self-nicknamed myself YuCCarine! The good news for us all is that it is really easy to cook. Let’s get to it!

Fried Yuca/Fried Cassava

Fried Yuca/Fried Cassava

Ingredients

  • 1 Yucca
  • Salt
  • Oil (half a pan)

Directions

1. Cut the yucca in 4 or 5 big chunks horizontally.

2. Using a sharp knife, make an incision along each chunk and gently peel off the skin of the yucca;

3. Cut each chunk of yucca in half vertically and remove the heart of the yucca (it looks like a small string)

4. Wash and carefully drain the yucca.
5. Heat the oil in your half-full cooking pan or use a deep fryer.

6. Cut the halves of the chunks in smaller semicircles (according to your taste; the fried yucca’s inside will be more tender/less crispy if you cut bigger pieces).
7. Optional: to achieve optimal tenderness, boil the yucca for a few minutes or until you can prick the yucca with a fork.

8. Fry the yucca pieces until they turn golden (If you chose to boil the yucca, it will tend to be lighter than the picture).

9. Drain the fried pieces into a strainer for a few minutes

10. Add a little bit of salt.
11. Serve hot, as a side dish or a snack. Enjoy!

    I had yucca once in Puerto Rico and it was life-changing lol. What’s the sauce on the side of the picture?

      Fried yucca is definitely one of our favorites at TF. The sauce is a simple tomato gravy. We will post the recipe soon.
