Pineapple beignets from Cote d’Ivoire

Pineapple and beignets go so well together. We’ve done one recipe from the Caribbean, and here is one from Côte d’Ivoire, West Africa. I served it for dessert to some friends and it was a huge hit.  These are  pineapple doughnuts, but they are  a lot more crunchy and lighter than your typical ones. Spring is coming, perfect time to add some fruity flavors to your doughnuts, I am not sure it would make them any healthier, but you might not feel as guilty.

Pineapple beignets Recipe

Ingredients

  • 4 cups flour
  • 500ml pineapple juice
  • 1 pinch yellow coloring
  • 1/2 teaspoon baking soda
  • 4 tablespoons butter
  • frying oil
  • 2 cups sugar

Directions

1. Pour the pineapple juice in a bowl. Mix in the sugar until it melts completely
2. Add the food coloring and baking soda. Keep mixing and incorporate the flour and room-temperature butter
3. Knead the dough until smooth and let it rest 20 mn
4. Form little balls with the dough and fry them in hot oil, about 5 minutes per doughnut

    Am I missing something. I don’t see how much sugar I should add

      Nice catch, Jonte. Thanks. It’s 2 cups of sugar (recipe has been edited).
      Also, I would recommend starting with a small batch, maybe halving the recipe, or even just use 1 cup of flour and adjust all the other ingredients.
