The BANANA bread that will make you go CO-CO-NUT!

Are you one of those weirdos (like me) who can only enjoy a banana when it is not ripe? Well, if you are, then you need a very special recipe to avoid throwing away those ripe, a.k.a way-to-sweet-to-late-to-eat bananas. And even if you do enjoy eating raw ripe bananas, this banana-coconut bread recipe will allow you to mix things up! While there are many little ingredients to include in this recipe, I can guarantee you that every single one of them is worth it as they will combine into a very unique taste you will not fail to appreciate! And if that is any indication of how good this fruity bread is, let me tell you this (in confidence): when I first came up with this recipe I was hoping to make the loaf last for at least 7 consecutive breakfasts. In the end it only lasted two days when I discovered how great it was upon waking up (breakfast), at tea time (10 a.m. and 4 p.m.), as a mid-day comforting snack (after lunch) and as a rewarding end-of-day dessert as well (after diner)…

Sweet banana-coconut bread

Serves 6-8

Cook time 45 minutes

Ingredients

  • 1 cup brown rice flour
  • 1 cup white rice flour
  • 1½ teaspoon xanthan gun
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 eggs (beaten)
  • 5 ripe bananas
  • 2/3 cups vegetable oil
  • 2/3 cups coconut milk
  • ¾ cup unsweetened coconut (finely shredded,)
  • ¾ cup brown sugar ((you can go up to 1 cup if your bananas are not very sweet))
  • 2 teaspoons vanilla extract

Directions

1. Pre-heat the oven at 375°F
2. Mix all ingredients in a large bowl
3. Pour the batter into a regular bread or cake pan


4. Bake for 45 minutes, or until a toothpick comes out clean


5. Enjoy (most important step!)
